Payare began his career as principal horn of the Simón Bolívar Symphony Orchestra before turning to conducting and winning first prize at the Malko Competition for Young Conductors in 2012. He served as principal conductor and later music director of the Ulster Orchestra, was named Music Director of the San Diego Symphony effective July 2019, and became Music Director of the Orchestre symphonique de Montréal for the 2022–23 season. He is a frequent guest with major international orchestras and is noted for often conducting from memory.
